Buttery Pasta & Three Bell Pepper Sauce Recipe

Preparation Time: 10 minutes

Portion: Ingredients for 3 people

Cooking Time: 15 minutes

 

Intro

It was one of those days I did not feel like going grocery shopping and convinced myself I would find something delicious to cook with what I already had at home. Preparation time and cooking time, all less than 30 minutes and I still had leftover.

 

Ingredients for 3

1 pack of pasta

1 fresh root ginger

2 garlic cloves

1½ red onions

2 large tomatoes

1 red bell pepper

1 yellow bell pepper

1 green bell pepper

2 cooked/grilled chicken breasts

 

 You need: vegetable oil, salt, chilli flakes, one whole seasoning cube, butter

 

Method

Step 1

Add the pasta to a pot of boiled water with a pinch of salt (I do not use salt because the sauce has salt) and bring to a boil over a high heat.

Cook the pasta for 8 – 10 minutes or until cooked with slight bite, then drain the water.

Return pasta to pot and add 1 tablespoon of butter to the pot and stir until the butter has melted.

Leave pot slightly covered, this is your Buttery Pasta.

 

Step 2

Peel and finely slice (or grate) the garlic and  fresh ginger

Deseed the three bell peppers (scrape the seed and pith out with a knife) and cut into small cubes

Slice the tomatoes into small cubes

Peel and finely slice the red onions

Transfer the cooked/grilled chicken to a clean board and slice into small cubes

 

Step 3

Heat a large wide based pan (preferably non-stick) with a drizzle of vegetable oil over a medium-high heat.

Once hot, add the diced ginger and stir until fragrant

Add the chopped garlic and stir together for 2 minutes until softened

 

Step 4

Add the bell peppers one after the other and stir continuously

Once the peppers are soft, add the chicken breast and leave to simmer for 2 minutes

Add the seasoning cube and a large pinch of salt. Take your pan off the heat

Add the chilli flakes and give everything a good mix up. This is your three bell pepper sauce

 

Step 5

Serve the three bell pepper sauce over the buttery pasta

Garnish with reserved chilli flakes

 

Recipe Tip:

I once tried a similar recipe with only two ingredients (Tomatoes and Onions), came out just as delicious as this one.

Also goes well with:

  • Basmati rice
  • Boiled plantain
  • Boiled yam

 

Remember to wash your fresh vegetables!
